It’s important to use fresh eggs – the freshest the better. Also, store the sauce in the fridge at all times and try to use it as soon as possible. But, if you end up with any leftover aioli that sat in the fridge for a while and not sure if it is OK to eat, it’s better not to.

The mustard makes the risk of splitting to the risk of nearly none. And I use two pinches of sugar together with salt and mustard. I use rapeseed oil, and use one whole egg and one yolk. And wisk in a couple of spoons of timid water at the end. Make the consistency less oily.
Then I add garlic. Keeps for at least two weeks in the fridge.5 stars
