Thanks for this low sugar recipe. Loquat tree finally yielded big and squirrels have not tasted every one. The diabetic in me enjoys the low sugar aspect. I used 4 lbs of fruit, 1 cup sugar, juice of large lemon, 3 tsp vanilla and a bit of grated ginger. Only got 3 1/2 8 oz jars but yummy. My fruit looks a bit smaller than the ones in your pictures.
