In reply to Linda Hypes. Hi Linda. Yukon Gold or any waxy potatoes are lower in starch than Russet potatoes. Now that being said, you can also use high starch potatoes if you like and don't mind that they might fall apart when cooked. Hope this helps.

Looking at this salad, I’m willing the snow to melt so I can enjoy it on my deck! I often mix sour cream and mayo in my potato salads too. I like the flavor of them together. There is one week a year I make mine with peas and that’s when the fresh peas are out. (I’m with you on no canned peas! Sorry, mom, :) )

I can tell that winter is nearing it’s end by to appearance of delicious summer salads like this one, popping up. I love your light version and using pickle juice as a flavoring agent!
