I have only used them in a raw food recipe, fully raw Kristina’s pumpkin pie but they are expensive, so I only would buy enough for the pie. I have a bunch that are so squishy and ripe I had to google what to do with them so they wouldn’t waste away and found your recipe. I tried it, added oranges to it so the kids would like it. It worked but could have been a bit more thinner in consistency by adding more milk. We also used almond milk instead of the coconut drink. I thought it had a Julius Cesar orange drink I grew up liking it. Thank you. I will make it again and puree my persimmons and freeze them.

Good question! :) The texture depends on the type of persimmon (there are 2 types – a tomato shaped persimmon and a acorn shaped persimmon). The tomato shaped persimmon is in general much sweeter than the acorn shaped one (which can also taste astringent if not ripe). They remind me of mangoes. They are sweet and rich in flavour – especially the tomato shaped ones. Texture-wise: tomato shaped ones -more mushy & acorn shaped ones are usually harder and sometime feel like biting into apple. If you ever find them, go for the tomato shaped ones! :)
