Mediterranean chicken wraps are perfect for the grilling season. Just throw the chicken breasts on your outdoor grill and while the meat is grilling, prepare the rest of the ingredients.

How to make chicken lettuce wraps
Making Mediterranean chicken lettuce wraps might be a bit time consuming when it comes to prep but you should still be able to finish them within 30 minutes.
Cut the chicken breast into 3 similar looking pieces. Season each one of them with salt, pepper, thyme and oregano. Place this onto a grill pan and grill until ready. This will take around 10 minutes and will depend on the thickness of the chicken breast.
Meanwhile cut the artichoke hearts in halves. Place them the cut side down onto the same pan and grill for a few minutes or until nice dark brown. By the way you don’t need to grill the artichokes if you don’t want to.
Half way through the grilling time, squeeze half of a lemon over the meat and artichokes. Repeat this after a few minutes with the rest of the lemon.
Making the dressing is very easy. Just combine the dressing ingredients in a bowl and mix. You can also adjust the ingredients to your liking.
The fillings: peel the orange and cut it into segments, then cut into small pieces. Wash the lettuce leaves and pat them dry or use a lettuce spinner, if you have one. Pat dry the sun-dried tomatoes and cut them into tiny pieces. Chop the spring onion.
Now all you have to do is fill each leaf with the prepped ingredients, grilled chicken pieces & artichoke hearts. When you are done you are ready to serve!
What is the best lettuce to use for lettuce wraps?
I personally prefer using baby romaine lettuce for its crunchy texture.
However, butter lettuce might be a better choice, especially when you prefer to fit more toppings in it. Romaine lettuce can be trickier to top, especially when using very small heads.
Useful tips:
- If planning to have this instead of dinner, I’d suggest using the large romaine lettuce as you can fit all the toppings in easily.
- This recipe can be easily doubled.
- Spring onions can be omitted completely or you can use chives instead (if you are looking for a milder flavor).

Mediterranean Chicken Lettuce Wraps
Ingredients
For the Chicken Breasts:
- 1 Large Chicken Breast
- Salt & Black Pepper to taste
- 1 tsp Dried Rosemary
- 1 tsp dried oregano
- 1-2 tbsp extra virgin olive oil
- 1 Medium Lemon
For the Greek Yogurt Dressing:
- 5 tbsp Greek Yogurt
- ¼ cup Fresh Flat Leaf Parsley , chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp Lemon Juice , freshly Squeezed
For the Lettuce Wraps:
- 1 Large Orange
- 5-6 Sun-Dried Tomatoes , drained
- 3 Baby Romaine Lettuce Heads
- 8 Artichoke Hearts , drained
- 1 Spring Onion
Instructions
- Season the chicken breast with salt, pepper and the herbs. Pour some olive oil onto a skillet or frying pan and cook on both sides until it’s cooked through.
- Cut the artichoke hearts in halves and place them the cut side onto the same skillet/frying pan or grill pan. Add lemon juice to the pan. Cook the artichokes until they are nice and brown.
- Meanwhile prepare the yogurt dressing: Combine the yogurt, chopped parsley, olive oil and lemon juice in a bowl and mix with a spoon until combined.
- Peel the orange, cut into segments and then into small pieces. Slice the sun-dried tomatoes. Wash and pat dry the lettuce leaves. Cut the spring onion.
- Arrange all the ingredients (including grilled and sliced chicken breast and artichokes) inside the leaves and drizzle over the yogurt dressing.
Notes
- The cooking time for chicken breast might vary depending on its size and thickness.
- Baby romaine lettuce can be substituted with butter lettuce.
- Turn these wraps into a quick salad and pour the dressing over instead of topping the leaves individually!
- The amount of dressing is enough for 16 small lettuce wraps (when spooning it over). However, if you want to use it as a dip, I suggest doubling the amounts.
