Guys, this honey cranberry bread recipe is a real star among sweet bread recipes. You will love the flavors, the honey aroma spread throughout your house when waiting for it to be baked, the soft and moist texture.
Quick breads are easy to make and taste divine! They are delicious for breakfast, brunch or afternoon snack. This honey cranberry bread is my favorite one at the moment but I also like Banana Bread, Irish Barmbrack or Orange Loaf Cake.
Now what I like about this honey cranberry bread the most is the honey part. Honey is a great sweetener and sometimes I wonder why I don’t use it more often in baking. It gives not only sweetness to your baked goods but also flavor, depending of what type of honey you use.
How to make honey cranberry bread
Cream butter and sugar until fluffy. Use an electric mixer for this step. After, honey and eggs are added and mixed in until combined.
Now it’s time to stir in flour, baking powder and salt. Don’t forget to sift the flour and baking powder before adding them to the bowl. All you have to do now is add the milk and cranberries and mix well. I prefer adding the milk in a few stages as it can get messy.
A 2lb loaf tin is perfect for this honey cranberry bread. I always line the tin with baking paper. This way I make sure the bread will come out easily. I also don’t have to wash the tin!
The baking will take about 70 minutes. Now I highly suggest checking it after 1 hour by inserting a wooden skewer in it. Because every oven bakes differently (yeah, it sucks but it’s true) yours might need less or more time in the oven.
Anyways, if the skewer comes out clean it’s a sign for you to take this honey cranberry bread out of the oven.
Tip: Wait until the loaf is cooled down before cutting it. The bread won’t be so crumbly.
Do you know what I love about baking? I love the moment when a bread/cake/pie/muffin comes out from the oven and it looks perfect. The feeling of success and pride kicks right away. Then there is the tasting part – the moment when you get to taste your homemade product.
And finally, there is the sharing part – the moment when you are confident enough to share your baked success with others. That’s a satisfaction.

Honey Cranberry Bread
Ingredients
- 2 cups Plain Flour
- 1 stick Unsalted Butter , soften (110 grams)
- ½ cup Superfine Sugar (100 grams)
- ½ cup Dried Cranberries (60 grams)
- ½ cup Milk (125 ml)
- 6 tablespoons honey
- 1 Medium Egg
- 3 teaspoons Baking Powder
- 1 teaspoon Salt
Instructions
- In a bowl, cream butter and sugar until fluffy. Beat in the egg and honey.
- Add sifted flour, baking powder and salt. Stir these into the mixture.
- Now slowly pour in milk while mixing with the electric mixer. At last stir in dried cranberries and pour into a 2 pound loaf tin.
- Bake in a preheated oven at 350°F (180°C) for 1 hour and 10 minutes or until an inserted skewer comes out clean.
- Spread with butter and/or your favorite jam and serve!

Hi Karl! Thank you. Unfortunately, quick breads usually take this long to bake. They are quick to prep but need about an hour in the oven. However, you can do other things while the loaf is in the oven! :)
