A friend of mine gave me a huge amount of beets from her garden and since i love soup i thought i would try this one on for size. I normally do my soups in very large batches and freeze for future lunches for work. I made 4x the amount not knowing what it would be like. Wow!! That first taste was phenomenal. The beet flavor with the hint of coconut really blew me away. I will be saving this for future use for sure. :)
