This was so good! I added 1 chopped zucchini after sautéing the veggies, did not use cabbage, but added a bag of baby spinach to the warming cycle. Also added a teaspoon or so of pesto as I did not have fresh basil. We all had seconds. Thanks!

Minestrone is one of my favorite soups to eat – but haven’t ever made it so thanks so much for this easy recipe! Now I need to get my hands on an Instant Pot!

I have as yet to get a pressure cooker. All of these recipes look delicious but I have a soft spot in my heart for minestrone! Such a gorgeous soup!
