My family was stationed in the Philippines 50+ years ago (’69 – ’71) at Clark Air Base. We had a young woman working for us who took care of my youngest sister (who was 6 months old when we flew over). She would often cook lumpia and bacon fried rice for us. I never learned how to cook it, but I watched her often and this recipe looks exactly the way I remember her preparing it. We all loved it, and we miss her bacon fried rice and her delicious lumpia! Now I’ll try my hand at making it for my sisters, daughter, and grandchildren.

In reply to Gayle. Hi Gayle. Yes, that how it is usually done the traditional way. However, I like to simplify things for myself and our readers. I cooked them separately as not everyone has a large pan to fit everything in and cooking eggs ahead is easier. You can, of course, cook them with rice. It does not really matter how big the chunks are as they will usually separate when mixing everything together, but again, you can separate them into smaller pieces, if you like. None of that will affect the overall taste of the fried rice. Hope this answers your question :).

When growing up we lived next door to a Chinese family who taught a how to make fried rice. Everything was stir fried in the same skillet with the scrambled egg being added last do it cooked into the tiniest pieces. I never see a recipe that doesn’t say to cook the eggs ahead leaving big chunks in the fried rice. Is there a reason why?

Oh, my oldest son absolutely goes crazy for bacon! He would love if I make this for dinner one night. I make chicken fried rice a lot, but never thought to add bacon.

Fried rice is one of my favorite side dishes for dinners in a hurry. You can put just about anything in it. I love the addition of bacon in your recipe.
