Do you ever feel hungry at weird times of the day? I have those moments. I don’t need to eat much but I gotta get something down my throat as soon as possible otherwise I turn into “an unbearable to be around monster”!
Sometimes I find it hard though as I feel like I am eating the same things over and over again. It’s all right when you are busy and trying to fix something fast for yourself. It’s soo not all right when you just get lazy and don’t want to experiment or try new flavors! You would be surprised how even the same flavors that you have known for ages just put together differently can make a big difference.
So yesterday I was hungry. Just a snack like hungry. I was looking for something different from the usual stuff. And I found it! Who would have known that a bunch of flat leaf parsley could make the difference I had been looking for!
As a kid I couldn’t stand parsley. I just didn’t understand why my mom always put this plant in various dishes. So it’s hard to believe that nowadays it’s one of my favorite herbs and I absolutely love its taste in salads.
Now imagine me being really hungry and seeing this bunch of parsley in front of me. At that moment it was the most delicious “food” ever! So I finely chopped it, added extra virgin olive oil and lemon juice. Then I toasted some sourdough bread, sliced some yummy vegetables and voila!
I ended up with this absolutely mouth-watering toast with parsley sauce spread over, topped with tomato, avocado and slices of Spanish dry cured sausage – Fuet.
My stomach was finally satisfied and so were my taste buds. I created quite an interesting snack (using ordinary ingredients) that contains a good portion of nutrients but also a bit of an indulgence in a form of the sausage. Afterwards I had a thought that it would be lovely with a few strips of crispy bacon! So I added it to the recipe. What do you think?

Parsley Toast Delight
Ingredients
- 4 slices Toast Bread
- A Bunch of Fresh Flat Leaf Parsley
- 1/2 Lemon
- 4-5 tbsp extra virgin olive oil
- 2 Medium Tomatoes
- 2 Avocados
- 8 Thin Bacon Slices (or Fuet-dried cured Spanish Sausage)
Instructions
- Toast the bread.
- Finely chop parsley (including the stems) and place it in a bowl. Pour over extra virgin olive oil and freshly squeezed lemon juice. Mix well.
- Spread the parsley sauce over the toasts, top with tomato and avocado slices. Finish with 1-2 bacon slices (that you have fried, of course) or dry cured Spanish sausage – Fuet.
- Serve for breakfast, lunch or anytime you like!
