Leftover stuffing waffles are one of the easiest meals to prepare the day after Thanksgiving. Whether it is breakfast, lunch or brunch they will be a hit at your table!

Ingredients
4cupshomemade leftover stuffing
2-4tablespoonsstock, of your choice, see note 1
3eggs(large), beaten, see note 2
salt, a pinch, see note 3
oilfor greasing the waffle maker

Instructions
Preheat your waffle maker.
Meanwhile: In a mixing bowl, mix together stuffing and stock. Use your hands to break large pieces of bread if you have any.
Add eggs and salt and stir until well combined.
Brush both sides of waffle iron with some oil (or use oil in a spray bottle) and add about 2-3 tablespoons of the mixture. Spread it around a bit and close.
Cook until the waffle turns golden brown, and the mixture is cooked through (for this reason it is better not to over-fill your waffle iron).
Serve with anything you like!
Notes
Any stock or broth will work: chicken/vegetable/turkey. Instead of stock, you can use milk.
Use either 3 large or 4 small eggs. Now, 3 large eggs should be plenty, but if you feel your stuffing is quite dry, add one more.
When using stock, you might not need to add salt at all but I like to add a little. With milk, I would definitely add a good pinch.
This recipe will yield 4 generous or 5 smaller portions.
Cooking time will vary, depending on how much mixture you use per waffle as well as how powerful waffle iron you have.
