Instructions
In a small saucepan, combine blueberries, sugar, lemon juice and 2 tablespoons water. Cook on medium-high for about 12 minutes, stirring from time to time.
Stir in butter and cook for a further 2 minutes. Turn off the heat and let it cool down a bit (see note 5).
Enjoy with yogurt, oatmeal, French toast sticks, pancakes or anything you like.
Notes
You can use either frozen or fresh blueberries. Fresh might need slightly more water than frozen.
Brown sugar can be substituted with white sugar or another sweetener.
Two ounces is about 4 tablespoons of butter. If you are after a richer taste, add more butter.
Feel free to add less lemon juice, then taste it and add more only if you like.
The sauce will thicken in the fridge. If you would like to serve it hot and have a thicker consistency, add about a teaspoon of cornstarch mixed with 1 teaspoon of water to the sauce and cook for a further 2 minutes or until it has thickened. Add more if still too thin.
