My Goodness! Guys! These strawberry marshmallow brownies are seriously the best homemade brownies out there!  Strawberries, chocolate and melted marshmallows combined together create an amazing dessert that is hard to resist!

By the way, top them with some extra fresh strawberries and you’ll make them even tastier. Trust me! You will know what I am talking about when you taste these brownies yourself!

Speaking of strawberries: Have you ever heard anyone asking this question: Is strawberry a fruit? Years ago my colleague at work was giving me a lecture about strawberries. Apparently they are neither fruits nor vegetables. How odd, isn’t it?

You know, I couldn’t wait to make these strawberry chocolate brownies because my parents’ garden is packed with strawberries. I also used them in Strawberry Salad that was a hit at our barbecue. By the way, these brownies taste best when they are still warm. They are sticky so I preferred using a fork instead of my hands but the rest of my family used their hands.

How to make strawberry marshmallow brownies

Easy-peasy preparation involves beating the eggs and sugar until foamy. When you have done this, add flour and baking powder. Mix. Then add melted chocolate and butter. Mix again. The batter is ready for your pan.

Make sure you lined your pan with baking parchment first. This goes in to the oven for 10 minutes.

After, marshmallow and strawberries are added bake them 10 more minutes. Shortly you will be rewarded with delicious strawberry marshmallow brownies.

Now every oven bakes differently so I suggest you check your brownie batch during the second half, after you top them with marshmallows as they can burn fast.

To make these brownies I used 15×8.5 inch pan and got 18 large brownies out of it. Now you can easily half this recipe if this is way too many for you.

Strawberry Marshmallow Brownies

These Strawberry Marshmallow Brownies are the best brownies you’ll ever eat! Rich & chewy on the inside and ooey-gooey on the outside!

Ingredients

  • 1¼ cup all-purpose flour
  • 7 oz Bittersweet / Semisweet Chocolate (200g)
  • 7 oz Marshmallows (200g)
  • 1½ stick Unsalted Butter (175g)
  • ¾ cup granulated sugar (150g)
  • 2 tsp Baking Powder
  • 4 Medium Eggs
  • 2 cups Fresh Strawberries

Instructions 

  • First melt chocolate with butter over a pot of simmering water (or in a microwave) and let it cool down.
  • In a large bowl, whisk eggs, add sugar and whisk until foamy. Sift in flour and baking powder. Mix until smooth (start off with a spatula and finish off with mixer).
  • Add melted chocolate and mix until combined. Pour this mixture into a large baking pan lined with baking paper parchment.
  • Bake in a preheated oven at 360°F/180°C for 10 minutes. After 10 minutes, take it out and top it with marshmallows & strawberries and transfer the pan back in the oven. Bake it for a further 10 minutes before taking them out from the oven.

Notes

Tip: If you are using large marshmallows, tear each in half first. You can do the same with strawberries.
These brownies taste amazing topped with extra fresh strawberries!

    Wow, this looks amazing Julia! They kind of remind me of s’mores minus the graham crackers. They look gorgeous too. And I had no idea about strawberries being neither fruit nor vegetable. I thought that anything with seeds was considered a fruit, but I’m definitely no expert! :)

      I sometimes use blackberries instead of strawberries. You could also try using raspberries or blueberries. Hope this helps.
