This simple sweet and sour chicken dinner is the perfect weeknight meal. Juicy chicken pieces with pineapple and peppers are ready on your table in 30 minutes!
Heat 2 tablespoons of oil and fry chicken until half-cooked. Transfer in a bowl and set aside.
Again heat 2 tablespoons of oil and add quartered onions, diced bell peppers and grated ginger. Fry for a minute before adding pineapple pieces, water, ketchup, pineapple juice, vinegar and brown sugar.
Simmer 1 minute and add the chicken. Cook for about 5 minutes or until the chicken is ready.
Serve with rice.
