Guys, today I have for you this easy cottage cheese bread recipe. It’s a quick bread which means that there is no yeast used hence no kneading is required. You simply combine the ingredients, pour the batter into a loaf tin and bake!

How to make this cottage cheese quick bread

Like I’ve already mentioned, the prep is super easy: All you need is a bowl and a mixer. A hand mixer is perfect as there is not much mixing going on here. You could actually make it without the mixer as well.

Combine the sugar, eggs and cottage cheese together. Then simply add walnuts, flour and baking powder. Stir them in until well combined. And…you are almost done.

Pour this mixture into a 2-pound loaf tin and bake. By the way, I always line my loaf tin with baking paper. It saves me a lot of time cleaning the tin (meaning I just pat it dry or use a kitchen paper towel to remove any spills).

Now this cottage cheese bread will take about 60 minutes to bake. But guys, don’t be put off by the long “waiting time”. You can simply set an alarm on your phone and walk away and do other things meanwhile you are waiting.

Walnut cottage cheese bread is perfect for breakfast or as an afternoon treat. Spread some butter and jam over, make yourself a cuppa and enjoy!

Cottage Cheese Bread with Walnuts

Ingredients

  • 1½ cup all-purpose flour (210 grams)
  • ⅔ cup cottage cheese (200 grams)
  • ½ cup superfine sugar (100 grams)
  • ½ cup walnuts (50 grams)
  • 3 eggs , medium
  • 2 teaspoons baking powder
Prevent your screen from going dark

Instructions 

  • In a bowl mix cottage cheese, sugar and eggs together, using an electric mixer.
  • Stir in finely chopped walnuts, sifted flour and baking powder.
  • Pour the mixture into a 2-pound (1-kilogram) loaf tin lined with baking parchment paper and bake in a preheated oven at 350°F/180°C for 1 hour or until and inserted skewer comes out clean.
  • Let it cool down before serving. Serve sliced with jam, butter or anything you like!
  • Enjoy!

          Hi Beth. I try to keep the level of sugar to a minimum as much as I can. While I think this recipe does not contain a lot of sugar (in comparison to other sweet breads), I would say it is still on the sweet side. Hope this helps.

    Hi, what can I use to substitute 1/2 cup sugar with? Can I use honey 1:1 ratio?

      Hi Kasey. I have not tested this recipe with honey so I am afraid I won’t be able to help you here. In general, honey adds more liquid to the bread so you might need to reduce it slightly, if you decide to try it.

      Hi Carol, I don’t recommend leaving the sugar out. You may end up with a loaf that has completely different texture. However, you can try, if you like. Or try reducing the sugar slightly. As for the herbs, yes, you can add them to the batter.

    So easy and great. Everyone loved it , I added 1/2cup of dried cranberries and a teaspoon of pumpkin pie spice. The first one was so good had to make another loaf.

    There are ingredients missing from this recipe. It will no be soft unless there is some sort of oil or butter added. There is no salt. Salt brings our the flavor of baked goods and other cooked items. How about some spice?
    I knew this recipe would not work. (I took a professional pastry chef course from an executive bakery chef.)
    It is like a brick. A waste of pantry items and nuts.1 star

      Hi Susan. There is no need for salt as cottage cheese contains it already. You could add some spice if you really wanted. However, this recipe does not call for any. It is a simple recipe. The bread is soft and moist thanks to the cottage cheese. I am not a professional pastry chef but made this several times and never had any problem. In fact, I made it last week and had not had any issues. Perhaps you forgot to add all the ingredients?

    Loved this recipe! Made it with gluten free flour, I took the same amount as a regular and it turned out delicious!
    In the beginning thought I would be dense because batter is pretty thick but it’s not!
    I also added some raisins.

    A bit too much sugar for us, but WOW, what a fabulous recipe! I threw the ingredients in our bread machine and let it do its thing under Quick bread setting, and it turned out moist and delicious. In the future, we’ll probably double the recipe and add some salt and savory herbs for our taste. Thanks for a great recipe.     Do you recommend a particular type of cottage cheese (e.g., full-fat, small curd, etc.)?

      Hi Beth. I’d say it depends on your preference. The small curd type should blend better with the ingredients. I use the one that has quite large curds and you can see som of them in the bread. As for the fat content – full fat products are usually better for you than the low fat but if you want to keep the fat content to a minimum, then use low-fat cottage cheese by all means.         I used small curd cottage cheese. I turned out well – I added a bit of cinnamon too but probably could have added more. It seems like this isn’t quite a sweet bread-type quick bread like banana bread. The texture made me wonder how it might work as a savory bread, especially adding garlic. Has anyone tried this?

    I have made this recipe 3 times; 2 times using honey as a substitute (and it turned out beautifully!), and 3rd time i omitted the walnuts, substituted honey and added shredded marble cheese. I overbaked the cheesy one; otherwise this bread turns out wonderful! Love this recipe and it is very simple to make! It also has extra protein and not too sweet! Thanks for sharing!!
